Wine Bar George in Disney Springs Is my new favorite adult playground at Walt Disney World® Resort. I love wine and this is a playground that allows you to try vintages you may not have the opportunity to elsewhere. Wine bar George offers some amazing wines from all regions, and then offers outstanding “wines by the ounce”.
Using the Coravin Wine Preservation system, each wine is enjoyed at its peak without uncorking it. We tried the following and they were amazing. All vintages we would not have the opportunity to enjoy as a full bottle. I also enjoy the fact that I could sample some very nice wines that are outside of my usual comfort varieties and really expand my taste buds. We tried a wine from China, Ao Yun made by Hennessy. It was a young vintage and very peppery. You could literally taste the jalapeno pepper in it. Super unique with a great story! The server suggested this when we asked for something unique and told us the story of how the winery started in China. The server on our return trip was just as informed and educated us as well. The staff truly know their stuff! Our other choices were more of the tried and true elite wines most people think of. We love Italian wines, especially Borolos, and the Ceretto, Bricco Rocche Barolo, ’11 did not disappoint. The final wine on our list was the Chateau Mouton Rothschild, ’06. All have high price points by the bottle, but at Wine Bar George, we were able to enjoy these at a fraction of the price without breaking the bank. George Miliotes, the owner and Master Sommelier, is there many nights. He was there both nights we were there, engaged in conversations and really enjoys guests that are trying new varieties, educating them on these wines. He makes it much more than a wine bar. As one of 274 Master Sommeliers in the world, George Miliotes is a passionate educator and curator of wines. A firm believer in education and knowledge-sharing, Miliotes continuously studies wine, identifying the most interesting wines through annual trips to wine-growing regions from France to South Africa. Building relationships with some of the best vintners in the world, he also takes an active role in the winemaking process helping to create custom blends.
As far as food, Wine Bar George offers small plates, Boards, family style plates and sweets. On our first visit, we tried the Charcuterie Board with four artisanal meats / chutney / grain mustard, grilled octopus, the humus plate, and skirt steak. My husband and I love grilled octopus and try it everywhere we go. Our favorite is here in Charleston, then one in Bluffton, SC but this one had amazing flavor! The charcuterie board was great! Wonderful choices of meats and the grain mustard was one of the best I have ever had. The skirt streak and chimichurri were a great combination and just the right size for the two of us. The humus was smooth, and the naan bread was a nice alternative to the typical offerings of pita.
Our second visit, we did desserts and although we typically don’t do dessert, the olive oil cake was amazing!
Wine Bar George has a very lively atmosphere, an enormous bar, and a friendly, attentive and knowledgeable staff. They have both inside seating and a nice terrace outside if you prefer that. The next time you are in Orlando, I highly suggest making time for Wine Bar George. It is the newest “must do”!
